This is a simple but delicious dish that is similar in flavor to Ratatouille, but with much less hassle. All the veggies and herbs are roasted together until their flavors blend together into a deep harmony of goodness. We toss this over pasta and grate fresh Parmesan cheese over the top.
2 Tomatoes, chopped
2 Zucchini, chopped
1 onion, chopped
2 Peppers, chopped
1 Eggplant, chopped
4 cloves of garlic, chopped
Handful of fresh basil, chopped
Handful of fresh parsley, chopped
Handful of fresh oregano, chopped
Salt
Olive oil
Turn oven on to 300. Toss all ingredients in a bowl and make sure salt and olive oil are distributed evenly. Don't be shy with the oil. Spread onto a 9 by 13 pan. Roast an hour or more until most of the liquid is absorbed and the veggies are browned. Halfway through roasting, mix the veggies around with a big spoon to ensure even roasting.
